Our inspiration for the Mole Negro Mystery Blend comes from an unforgettable journey to Oaxaca, the heartland of mole. It is our favourite region in Mexico, which we have visited many times. During our last visit, we had the privilege of learning to make all seven traditional moles from skilled Oaxacan cooks. Using traditional Mexican cooking tools like the metate (grinding stone) and clay pots, we discovered the meticulous process and artistry behind each mole.
At bustling Oaxacan markets, we discovered shiny piles of mole paste—a testament to the craftsmanship of local artisans. They explained to us how mole is prepared: by mixing the paste with stock—chicken, vegetable, or beef—and simmering it until it transforms into a luscious, velvety sauce. The result is a flavor-packed masterpiece that embodies centuries of culinary tradition.
This experience was the cornerstone of our blend’s development, ensuring it captures the authenticity of Oaxaca’s rich flavors.
